How long does hot sauce last?

Just like all foods it depends on when it was opened, how long it has been opened and what is in side. Apples are fine longer if they are not cut open. Once you cut them open, with in seconds they will begin to turn brown. Vegetables are great but don’t let them sit to long or they will go south in a hurry. And that has a lot to do with the environment they are in.   The same can be said about hot sauce. The vinegar in most sauces will keep them from spoiling. You will notice a color change in some sauces but that is from the acid in the vinegar breaking down the sauce. The only way to really tell if it is bad is to do a small taste test.   A lot of sauces sit out for years (Tabasco 7 years) during their creation and the only thing done is filtering to get the big chunks out. That should tell you these sauces should be good as a table topper   So I guess it depends on the sauce and its ingredients.   The heat will not die off, it has no were to go if anything its going to get stronger. But if the bacterium is killed off, it is being done by the vinegar.   Some sauces have to be refrigerated and others don’t. As mentioned above Tabasco can sit on your counter for years and never go bad. But I wouldn’t leave Dave’s Hurtin Jalapeño out for extended period of time.   But as with all foods you should always take the steps necessary to ensure the food you are eating isn’t going to harm you as for the heat level. The guys challenge one another to a contest – who will last the longest after eating a ghost pepper; the hottest pepper in the world. A single flake contains over 400 times the heat of Tabasco. Which guy will hold out the longest before drinking a glass of cold milk waiting within easy reach?
